  • 1 lb flank steak (or NY strip/sirloin)
  • 1 pint grape or cherry tomatoes
  • ½ medium red onion
  • 1 head romaine lettuce
  • 1 large cucumber
  • ⅓ cup pitted kalamata olives
  • 1 cup garlic hummus
  • ½ cup crumbled feta cheese (optional)
  • 1 cup plain yogurt
  • 1 Tbsp olive oil or avocado oil
  • Juice of ½ lemon
  • 1 large clove garlic, finely minced
  • ½ tsp dried oregano
  • ½ tsp dried dill
  • ½ tsp salt
  • 2 tsp chopped fresh mint (or ½ tsp dried mint)

Instructions

  1. Prepare the dressing by whisking together yogurt, olive oil, lemon juice, minced garlic, oregano, dill, salt, and mint until smooth. Refrigerate.
  2. Preheat grill to high heat (450°F). Thread tomatoes and onions onto skewers; brush with oil and season with salt and pepper.
  3. Grill veggies for 5-8 minutes until softened. Cook flank steak for about 4-5 minutes per side for medium-rare; let rest before slicing.
  4. Assemble bowls with chopped romaine as the base topped with sliced steak, grilled veggies, cucumbers, olives, hummus, and feta cheese.
  5. Drizzle with herbed-yogurt dressing and garnish with lemon wedges or mint leaves.
