  • 1/4 cup olive oil
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cucumber
  • 1 pint grape tomatoes
  • 1/2 red onion
  • 1/4 bunch fresh parsley (chopped)
  • 1 can (15 oz) cannellini beans (rinsed and drained)
  • 1 can (12 oz) chunk light tuna (rinsed and drained)
  • 2 oz feta cheese (optional)

Instructions

  1. In a bowl or jar, whisk together the olive oil, apple cider vinegar, lemon juice, oregano, salt, and pepper to create the vinaigrette. Set aside.
  2. Chop the cucumber into quarter rounds, halve the grape tomatoes, and finely dice the red onion. If desired, soak the onion slices in ice water for five minutes to mellow their flavor.
  3. In a large bowl, combine the chopped cucumber, tomatoes, onion, and parsley. Pour the vinaigrette over the veggies and toss gently until well coated.
  4. Fold in the rinsed cannellini beans and tuna gently to maintain the tuna's texture. If using feta cheese, crumble it on top just before serving.
  5. Serve immediately or refrigerate for up to four days for meal prep.
