  • ¼ cup unsweetened finely shredded coconut
  • 3 tablespoons unsweetened cacao powder
  • 1 tablespoon melted virgin coconut oil
  • ¼ teaspoon sea salt
  • ¼ cup dried cranberries (or cherries/goji berries)

Instructions

  1. Process Nuts and Dates: In a food processor, combine dates, walnuts, pecans, and ¼ cup of pistachios; pulse until chunky but combined.
  2. Mix Additional Ingredients: Add shredded coconut, chia seeds, cacao powder, melted coconut oil, and sea salt; process until well mixed. If dry, add warm water as needed.
  3. Add Remaining Ingredients: Gently fold in remaining pistachios and dried cranberries; transfer to an 8×4 inch loaf pan lined with parchment paper and press firmly into an even layer.
  4. Melt Chocolate: Melt dark chocolate over low heat or in the microwave until smooth.
  5. Top Brownies: Pour melted chocolate over brownie mixture; sprinkle with chopped pistachios, cranberries, and pecans.
  6. Chill: Freeze for 20-45 minutes until firm; slice into squares before serving.
