  • 4 boneless, skinless chicken thighs, cut into bite-sized pieces
  • Salt and pepper to taste
  • 3 garlic cloves, minced
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • Zest and juice of 1 lemon
  • 300 grams spaghetti or linguine
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper and cook until golden brown (6-8 minutes). Remove chicken from skillet.
  2. In the same skillet, sauté minced garlic for about one minute until fragrant.
  3. Add chicken stock, heavy cream, lemon zest, and juice; simmer for 2-3 minutes.
  4. Cook pasta according to package instructions; reserve half a cup of pasta water before draining.
  5. Return chicken to the skillet with drained pasta; toss everything together. If needed, add reserved pasta water for desired sauce consistency.
  6. Stir in grated Parmesan cheese and chopped parsley before serving.
