  • 200g granulated sugar
  • 50g Dutch processed cocoa powder
  • 160g all-purpose flour
  • 1 tsp instant espresso powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 120g sour cream (room temperature)
  • 75g vegetable oil
  • 2 large eggs (room temperature)
  • 1 1/2 tsp vanilla extract
  • 6 Oreo cookies
  • 200g butter (cool room temperature)
  • 315g powdered sugar
  • 1 tsp vanilla extract
  • 2 tsp whole milk (room temperature)
  • 12 Oreos for decoration + extra for crumbling on top

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together sugar, cocoa powder, flour, baking powder, baking soda, and salt.
  3. In another bowl, mix boiling water, sour cream, vegetable oil, eggs, and vanilla extract until smooth.
  4. Combine wet and dry mixtures gently; fold in crushed Oreos.
  5. Divide batter into prepared muffin tins and bake for about 22 minutes or until a toothpick comes out clean.
  6. Cool completely before frosting with buttercream made from butter, powdered sugar, vanilla extract, and milk.
  7. Decorate with additional crushed Oreos or whole cookies.
