  • 1/4 cup bread flour
  • 3 2/3 cups bread flour
  • 1/3 cup granulated sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1/3 cup whole milk (room temperature)
  • 1/3 cup heavy cream
  • 1 large egg (room temperature)
  • Tangzhong (from recipe above)
  • 1 teaspoon vanilla paste or extract
  • 6 tablespoons unsalted butter (softened)
  • 2/3 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup all-purpose flour
  • 4 tablespoons unsalted butter (room temperature)
  • 2 ounces cream cheese (room temperature)
  • 1 cup powdered sugar
  • 2 1/2 tablespoons heavy cream

Instructions

  1. Prepare the Filling: Combine cubed peaches, sugar, lemon juice, cornstarch, and water in a saucepan. Cook over medium heat until slightly thickened. Set aside to cool.
  2. Make the Dough: Create tangzhong by mixing water and bread flour in a bowl. Combine remaining dough ingredients in another bowl until well-mixed. Knead until smooth.
  3. Let It Rise: Place dough in a greased bowl, cover with cloth, and let rise until doubled in size.
  4. Roll Out & Fill: Roll out dough into a rectangle, spread softened butter on top, sprinkle with sugar-cinnamon mix, and layer sliced peaches.
  5. Shape & Slice: Roll tightly from one edge to another and slice into equal pieces. Arrange on a lined baking tray.
  6. Bake & Top: Let rolls rise again briefly before baking until golden brown. Prepare the crumb topping while they bake and sprinkle it over the warm rolls before drizzling with cream cheese glaze.
