  • 10 tbsp unsalted butter (melted)
  • 24 ounces cream cheese (room temperature)
  • 1 1/4 cups light brown sugar
  • 3 tbsp all-purpose flour
  • 1 cup sour cream (room temperature)
  • 4 large eggs (room temperature)
  • 1 cup chopped pecans (toasted)
  • 1/2 cup sugar (for topping)
  • 3/4 cup heavy whipping cream

Instructions

  1. Preheat oven to 325°F (163°C). Prepare a 9-inch springform pan by lining it with parchment paper and greasing the sides.
  2. Combine graham cracker crumbs, brown sugar, and salt in a bowl. Mix in melted butter until moistened. Press into the pan and bake for about 10 minutes. Cool.
  3. Lower oven temperature to 300°F (148°C). Beat together cream cheese, brown sugar, and flour until smooth. Add sour cream and vanilla, then mix in eggs one at a time. Fold in toasted pecans.
  4. Pour filling into crust and bake in a water bath for about 1 hour and 15 minutes until slightly jiggly in the center.
  5. Let cool gradually in the oven for about an hour before refrigerating for at least five hours or overnight.
  6. For the topping, heat sugars, cream, and butter until melted; stir in pecans and let cool before spreading over the chilled cheesecake.
