  • ½ cup Puori PW1 Vanilla Protein Powder
  • ½ cup creamy almond butter (or sunflower seed butter)
  • â…“ cup canned pumpkin puree
  • 3 tablespoons pure maple syrup
  • ¼ cup shredded coconut
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • Pinch of fine salt
  • 1 tablespoon coconut oil, melted
  • â…“ cup mini chocolate chips (semi-sweet, milk, dark, or dairy-free)
  • 3 tablespoons roasted pumpkin seeds, roughly chopped

Instructions

  1. In a bowl, mix the oats, protein powder, shredded coconut, flaxseed, spices, and salt.
  2. Add almond butter, pumpkin puree, maple syrup, melted coconut oil, chocolate chips, and pumpkin seeds. Stir until combined.
  3. Chill the mixture in the fridge for 10-20 minutes.
