  • 1/2 cup granulated sugar (for filling)
  • 2 teaspoons ground cinnamon
  • 1 cup fresh raspberries (finely chopped)
  • 1 cup powdered sugar (for glaze)
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, combine flour, sugar, yeast, and salt.
  2. In another bowl, whisk together lukewarm milk, melted butter, and eggs.
  3. Gradually mix wet ingredients into dry ingredients until a soft dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth.
  5. Let the dough rise in a greased bowl covered with a damp cloth until doubled (about 1 hour).
  6. Mix sugar and cinnamon in a small bowl; toss minced raspberries in this mixture.
  7. Roll out the risen dough into a rectangle; spread raspberry-cinnamon mixture over it.
  8. Roll tightly from one edge and cut into slices; place in a greased baking pan to rise again (30 minutes).
  9. Preheat oven to 375°F (190°C) during the second rise.
  10. Bake rolls for about 25 minutes until golden brown.
  11. Make the glaze by whisking powdered sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  12. Drizzle glaze over warm rolls before serving.
