  • 1 cup milk
  • 4 tablespoons butter (cubed)
  • 3 1/4 – 3 1/2 cups all-purpose flour
  • 1 package (2 1/4 teaspoons instant or rapid rise yeast)
  • 1/4 cup granulated sugar
  • 8 ounces cream cheese (softened)
  • 12 ounces fresh raspberries
  • Powdered sugar for glaze
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1 tablespoon cornstarch
  • 2 teaspoons lemon zest
  • 1 egg

Instructions

  1. Grease a 9 x 13 inch baking pan.
  2. In a small saucepan over medium-low heat, combine milk and butter until melted and warm.
  3. In a stand mixer bowl, mix together 2 cups flour, yeast, sugar, and salt. Add in the egg and warm milk mixture; combine thoroughly.
  4. Switch to a dough hook and gradually add more flour until the dough pulls away from the bowl sides. Knead for about five minutes.
  5. In one bowl, mix softened cream cheese with three tablespoons of sugar and vanilla until smooth. In another bowl, toss raspberries with remaining sugar, cornstarch, and lemon zest.
  6. Roll out the dough into a rectangle; spread cream cheese mixture evenly on top followed by raspberries. Roll tightly into a log and pinch edges closed.
  7. Cut into twelve equal slices and place in prepared pan. Cover with a kitchen towel and let rise in a warm spot for about 40-60 minutes.
  8. Preheat oven to 350°F (175°C). Bake rolls for about 20-25 minutes until golden brown.
  9. While baking, whisk together powdered sugar, melted butter, vanilla, and milk for the glaze.
  10. Let rolls cool slightly before glazing them while still warm.
