  • ½ cup buttermilk
  • Zest of 1 lemon
  • ½ cup raspberry jam or preserves
  • ½ cup lemon curd
  • 1 cup unsalted butter, softened for frosting
  • 4 cups powdered sugar
  • 23 tbsp milk
  • 1 tsp vanilla extract for frosting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. In a large bowl, cream softened butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then add vanilla extract and lemon zest.
  5. Alternate adding dry ingredients and buttermilk until just combined.
  6. Spoon batter into cupcake liners, filling them two-thirds full.
  7. Bake for 18-20 minutes until a toothpick comes out clean; cool completely on a wire rack.
  8. Once cooled, fill each cupcake with raspberry jam followed by lemon curd.
  9. For frosting, beat butter until smooth; add powdered sugar gradually with milk to desired consistency. Frost cupcakes and garnish with fresh raspberries.
