  • 2 red snapper fillets (about 170 g each)

  • 240 ml heavy cream
  • 120 ml chicken broth
  • 28 g unsalted butter
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 2 garlic cloves, minced
  • 50 g grated Parmesan cheese
  • 1 teaspoon hot sauce (optional)

Instructions

  1. In a saucepan, bring chicken broth to a boil and whisk in grits. Simmer for 20-25 minutes until thick and creamy. Stir in heavy cream, butter, and cheddar cheese; season with salt and pepper.
  2. Toss shrimp with Cajun seasoning. In a skillet, heat olive oil and butter over medium-high heat, sautéing garlic before adding shrimp. Cook until pink; set aside.
  3. Pat dry snapper fillets and season with Cajun seasoning. In the same skillet, cook fillets until golden brown; remove.
  4. Prepare the Cajun cream sauce in the skillet by melting butter and adding garlic, seasonings, chicken broth, heavy cream, and Parmesan cheese until smooth.
  5. Serve grits topped with snapper and shrimp drizzled in the sauce.
