  • 1 ¼ cups warm water
  • 2 ½ cups bread flour
  • 2 teaspoons sea salt
  • ¼ cup extra-virgin olive oil, divided
  • 2 tablespoons plant-based margarine (for vegan option)
  • 23 sprigs fresh rosemary, minced
  • 3 garlic cloves, minced
  • 2 tablespoons finishing salt

Instructions

  1. Activate the yeast by mixing it with honey and warm water; let sit until foamy.
  2. Combine the flour and sea salt with the yeast mixture to form a dough.
  3. Coat dough with olive oil, cover, and refrigerate overnight.
  4. Knead the dough briefly, then shape into portions and place them in a greased muffin tin.
  5. Let rise until puffed, then infuse olive oil with minced rosemary and garlic.
  6. Preheat oven to 450°F (230°C) and create dimples in each muffin.
  7. Top with the rosemary-garlic mixture and bake for about 20 minutes until golden brown.
  8. Brush with melted margarine and finish with finishing salt.
