  • 3 medium apples, peeled and diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 teaspoon sea salt

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 9-inch springform pan.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press into the bottom of the pan and bake for about 10 minutes.
  3. Beat softened cream cheese in a large bowl until smooth. Gradually add sugar, then mix in eggs one at a time. Stir in vanilla extract and sour cream until just combined.
  4. Pour the filling over the cooled crust and bake in a water bath for about 55-65 minutes until slightly jiggly in the center. Allow cooling gradually in the oven.
  5. For the apple topping, melt butter in a skillet over medium heat. Add diced apples, brown sugar, cinnamon, and nutmeg; cook until soft (about 8 minutes).
  6. For salted caramel sauce, melt sugar over medium heat until amber-colored; add cubed butter and cream while whisking continuously. Stir in sea salt.
