  • 5 1/2 cups whole milk
  • 4 cups smoked Gouda cheese (shredded)
  • 1/2 cup all-purpose flour
  • 8 tablespoons unsalted butter (divided)
  • 2 cups Panko bread crumbs
  • 1/2 cup Parmesan cheese (shredded, divided)
  • 1 tablespoon dijon mustard
  • 2 teaspoons salt
  • 1/8 teaspoon ground nutmeg
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 4 ounces cream cheese

Instructions

  1. Preheat your oven to 375°F.
  2. In a medium bowl, mix Panko bread crumbs with 1/4 cup Parmesan cheese and thyme leaves. Melt 2 tablespoons of butter and combine with the crumb mixture; set aside.
  3. Warm milk in a saucepan over medium heat. In another skillet, melt remaining butter and whisk in flour to create a roux. Gradually add warm milk until thickened.
  4. Stir in Dijon mustard, spices, cream cheese, and three cups of smoked Gouda along with remaining Parmesan cheese into the sauce.
  5. Cook elbow pasta according to package instructions until slightly firm; drain. Mix pasta with the cheese sauce until well coated.
  6. Transfer the mixture into a greased casserole dish and top with remaining Gouda and breadcrumb mixture. Bake for about 30 minutes until golden brown.
