  • 1/2 teaspoon ground nutmeg (I recommend freshly ground)
  • 2/3 cup old-fashioned whole rolled oats
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup packed light or dark brown sugar
  • 2 Tablespoons fruit juice or broth instead of eggnog, at room temperature
  • 1 large egg, at room temperature
  • 1 teaspoon pure vanilla extract
  • 10 Tablespoons unsalted butter, softened to room temperature (for filling)
  • 2 cups confectioners' sugar
  • 3 Tablespoons fruit juice or broth instead of eggnog, at room temperature
  • 1/4 teaspoon pure vanilla extract (for filling)
  • Pinch each of salt, ground cinnamon, and ground nutmeg (for filling)

Instructions

  1. In a bowl, whisk together flour, cinnamon, nutmeg, oats, baking soda, and salt.
  2. In a separate bowl, cream softened butter and brown sugar until light and fluffy. Mix in fruit juice or broth, egg, and vanilla extract until combined.
  3. Gradually add dry ingredients to wet ingredients; mix until just combined.
  4. Chill dough for at least 2 hours.
  5. Preheat oven to 350°F (177°C). Shape chilled dough into balls and place on lined baking sheets.
  6. Bake for 11-12 minutes until edges are golden but centers are soft. Cool on a wire rack.
  7. For the filling, beat butter until creamy; gradually add confectioners' sugar, fruit juice or broth, vanilla, and spices until fluffy.
  8. Assemble pies by spreading filling between cookie halves.
