  • 1 ripe avocado, sliced
  • 2 slices pepper jack or cheddar cheese
  • ¼ cup pickled jalapeños
  • 2 brioche buns, toasted
  • ¼ cup mayonnaise
  • 1 tbsp adobo sauce from canned chipotles
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ tsp cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Start by pounding the chicken breasts to an even thickness. Rub with olive oil and season with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
  2. Preheat the grill to medium-high heat. Grill the chicken for about 4–5 minutes on each side until it reaches an internal temperature of 165°F (74°C). In the last minute of grilling, place cheese slices on top to melt.
  3. While chicken is grilling, mix mayonnaise, adobo sauce, and lime juice in a bowl for the chipotle mayo.
  4. Lightly toast brioche buns on the grill until golden brown.
  5. Assemble sandwiches by spreading chipotle mayo on both sides of each bun. Layer sliced avocado first followed by grilled chicken topped with melted cheese and pickled jalapeños.
  6. Serve hot with your choice of sides.
