Ingredients

Scale
  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup white or brown rice
  • 1 cup black beans
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 avocado, sliced
  • Optional: shredded cheese (cheddar or Monterey Jack), sour cream, salsa

Instructions

  1. Marinate the Steak: Combine olive oil, minced garlic, cumin, chili powder, salt, and pepper in a bowl. Rub mixture onto flank steak and let marinate for at least 30 minutes.
  2. Cook the Rice: In a saucepan, bring 2 cups of water to boil. Add rice and reduce heat to low. Cover and simmer until tender (18-20 minutes). Fluff with a fork.
  3. Grill the Steak: Preheat grill or grill pan over medium-high heat. Grill steak for about 4-5 minutes on each side to preferred doneness. Let rest for 5 minutes before slicing.
  4. Combine Ingredients: In a large bowl, mix rice with black beans, corn, tomatoes, red onion, cilantro, and lime juice.
  5. Assemble Bowls: Divide rice mixture into serving bowls. Top with sliced steak and avocado; add cheese and any optional toppings.
  6. Serve & Enjoy: Serve immediately while warm.
