  • 1.5 pounds flank steak
  • 12 oz corn (grilled or frozen)
  • 1 cup cherry tomatoes, quartered
  • 12 jalapeños, diced (remove seeds and white membrane)
  • 3 bell peppers (red, green, orange), sliced
  • 1/2 red onion, diced and sliced
  • 23 tablespoons chicken broth
  • 1/4 cup olive oil
  • 1/3 cup fresh lime juice (approx. 2 limes)
  • zest of 2 limes
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon garlic, minced
  • 1/4 teaspoon kosher salt
  • 12 tablespoons cilantro, chopped (optional)
  • cilantro lime rice (homemade or store-bought)
  • cilantro lime sauce
  • homemade guacamole or avocado chunks
  • tomatoes or blender salsa
  • sour cream, regular or dairy-free
  • lime wedges
  • fresh cilantro

Instructions

  1. Prepare the salsa by combining corn, cherry tomatoes, jalapeños, red onion, lime zest and juice, cilantro, salt, pepper, and optional spices in a bowl.
  2. Marinate flank steak with olive oil, lime juice and zest, chili powder, cumin, minced garlic, soy sauce, and salt in the refrigerator for at least 30 minutes.
  3. Cook the steak in a hot skillet over medium-high heat for about 4-5 minutes on each side until medium-rare. Allow to rest before slicing.
  4. Sauté garlic in the same skillet before adding onions and bell peppers along with fajita seasoning until tender.
  5. Assemble bowls starting with cilantro lime rice as a base followed by sautéed veggies and sliced steak. Top with salsa, guacamole, sour cream, cilantro sauce, lime wedges.
