  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-style breadcrumbs
  • 1 cup panko breadcrumbs
  • 1/2 cup vegetable oil
  • 1/4 cup unsalted butter
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pound chicken breasts between plastic wrap to ½-inch thickness for even cooking.
  3. Set up three breading stations: one for seasoned flour, one for whisked eggs with water, and one for the breadcrumb mixture.
  4. Coat each chicken breast first in flour, then dip in egg wash, and finally roll in the breadcrumb mix.
  5. Heat vegetable oil in a skillet over medium heat and sear chicken for about 4-5 minutes per side until golden brown.
  6. Transfer chicken to a baking sheet, top with mozzarella cheese, and bake for about 8-10 minutes until cheese is melted and chicken is cooked through.
  7. Drizzle melted butter on top and garnish with chopped parsley before serving.
