  • 4 large hard-boiled eggs (chopped)
  • 2 celery stalks (diced)
  • ¼ cup red onion (finely chopped)
  • 6 slices cooked turkey bacon (crumbled) or crispy chickpeas
  • 2 tablespoons fresh chives (chopped)
  • 1 cup mayonnaise
  • ½ cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika

Instructions

  1. Cook the cubed potatoes in cold salted water until fork-tender (15-20 minutes). Drain and cool.
  2. In a bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, salt, pepper, garlic powder, and paprika.
  3. In a large bowl, combine cooled potatoes, chopped eggs, celery, red onion, crumbled bacon or crispy chickpeas, and chives.
  4. Pour the dressing over the potato mixture and gently fold until evenly coated. Cover and refrigerate for at least one hour before serving.
