Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup whole milk, lukewarm
  • 8 ounces cream cheese, softened
  • 1/4 cup granulated sugar (plus extra for topping)
  • 1/2 cup sour cream or Greek yogurt
  • 1/2 cup packed brown sugar
  • 1 tablespoon ground cinnamon
  • 1 cup fresh strawberries, hulled and sliced
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 tablespoon all-purpose flour for filling
  • 4 ounces cream cheese for icing
  • 1/2 cup powdered sugar for icing
  • 1/4 teaspoon vanilla extract for icing
  • 1 to 2 tablespoons whole milk for icing
  • Pinch of salt for icing

Instructions

  1. Activate the yeast by combining lukewarm milk and active dry yeast in a small bowl; let sit until frothy (5–10 minutes).
  2. In a large bowl, mix flour, granulated sugar, and salt. Create a well and add the yeast mixture, softened butter, egg, and vanilla extract; mix until a dough forms.
  3. Knead on a floured surface for about 8–10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise in a warm spot until doubled in size (1–1.5 hours).
  5. Prepare the cheesecake filling by beating cream cheese with sugar, vanilla extract, flour, and sour cream until smooth.
  6. Combine brown sugar with cinnamon and salt for the cinnamon-sugar mixture.
  7. Roll out the dough into a rectangle; spread softened butter over it before layering cheesecake filling and cinnamon-sugar mixture.
  8. Roll tightly from one long edge into a log shape and slice into twelve equal pieces.
  9. Place rolls in a greased baking dish to rise again (30–45 minutes).
  10. Preheat oven to 350°F (175°C) and bake for 25–30 minutes until golden brown.
  11. For icing, beat together cream cheese with powdered sugar, vanilla extract, and milk until smooth; drizzle over warm rolls topped with sliced strawberries.
