  • 2 large eggs

  • 1 teaspoon salt
  • 1 cup (150 g) freeze-dried strawberries
  • 1 cup (150 g) strawberry cake mix
  • Crushed freeze-dried strawberries
  • Crushed graham crackers
  • Melted butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla extract.
  5. In another bowl, whisk together flour, baking soda, and salt; then combine with wet ingredients until just mixed.
  6. Fold in freeze-dried strawberries and strawberry cake mix until evenly distributed.
  7. Scoop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart.
  8. For extra flavor, sprinkle crushed freeze-dried strawberries on top if desired.
  9. Bake for 10-12 minutes until edges are golden brown; let cool before transferring to a wire rack.
  10. For the topping, mix crushed freeze-dried strawberries with crushed graham crackers and melted butter; gently press onto cooled cookies.
