  • â…“ cup cornstarch

  1. Preheat the oven to 330°F (160°C). Line a 7×11 inch baking dish with parchment paper.
  2. Separate egg whites from yolks. Beat egg whites until stiff peaks form.
  3. In another bowl, cream egg yolks with monkfruit sweetener until light and fluffy.
  4. Add Greek yogurt and mix well, then sift in cornstarch and combine.
  5. Gently fold in the whipped egg whites to maintain fluffiness.
  6. Pour the batter into the prepared dish and place it on a larger baking sheet filled with boiling water (about 1/4 to 1/3 submerged).
  7. Bake for 45 minutes at 330°F (160°C), then raise temperature to 350°F (180°C) for an additional 15 minutes.
  8. Once baked, cool gradually in the oven with the door ajar for about 1-2 hours before serving.
