  • 1/4 cup granulated sugar (for crust)
  • 1/3 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup sour cream
  • 3/4 cup granulated sugar (for filling)
  • 3 large eggs
  • 2 tablespoons freshly squeezed lemon juice
  • 2 cups mixed fresh berries
  • 2 ripe peaches, thinly sliced
  • Honey or agave syrup

Instructions

  1. Preheat oven to 325°F (163°C). In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan. Bake for 8–10 minutes until golden.
  2. In a mixer, beat cream cheese until smooth. Add sour cream and sugar; mix well. Incorporate eggs one at a time on low speed, followed by lemon juice.
  3. Pour filling over the cooled crust and bake for 45–50 minutes until edges are set. Cool in the oven with the door cracked open.
  4. Chill in the refrigerator for at least four hours or overnight.
  5. For the topping, cook mixed berries and sliced peaches with honey over medium heat until juices release. Add cornstarch slurry to thicken.
  6. Spread cooled fruit topping over the cheesecake before serving.
