  • 12 oz broccoli florets
  • 1 lb ground beef
  • 1 cup teriyaki sauce
  • 2 tablespoons olive oil
  • Optional: minced garlic and ginger
  • 1/4 cup (60g) light mayo
  • 1 1/2 tablespoons (23g) sriracha or chili garlic sauce
  • 1 tablespoon (21g) honey
  • 1 tablespoon (15g) rice vinegar
  • 1/2 teaspoon garlic powder
  • Rice or cauliflower rice
  • Toasted sesame seeds
  • Scallions, thinly sliced

Instructions

  1. Prepare the yum yum sauce by combining light mayo, sriracha or chili garlic sauce, honey, rice vinegar, and garlic powder in a bowl. Mix well and set aside.
  2. In a skillet over medium-high heat, add 1 tablespoon of olive oil and cook broccoli florets until slightly charred (about 3 minutes). Remove from skillet and set aside.
  3. Add remaining oil to the skillet; brown the ground beef thoroughly while breaking it apart as it cooks.
  4. If using garlic and ginger, push beef aside in the pan and sauté them briefly until fragrant.
  5. Pour in teriyaki sauce, mix well, add back broccoli, and cook until heated through.
  6. Serve over rice or cauliflower rice with optional garnishes like sesame seeds and sliced scallions.
