  • 1 3/4 cup all-purpose flour
  • 1 cup almond flour (or substitute regular flour)
  • 1/4 cup packed brown sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 egg (beaten)
  • Cold buttermilk (to make 1 cup)
  • 1 1/2 tsp vanilla extract
  • 8 Tbsp cold unsalted butter, cut into pieces
  • 1 cup white chocolate chips
  • 3/4 cup chopped macadamia nuts

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a food processor, pulse together flour, almond flour, brown sugar, salt, baking powder, and baking soda.
  3. In a measuring cup, beat the egg and mix with buttermilk until you reach the total of 3/4 cup; add vanilla extract.
  4. Pulse cold butter into dry ingredients until coarse crumbs form.
  5. Slowly pour in the buttermilk mixture while pulsing until just combined.
  6. Gently fold in white chocolate chips and macadamia nuts.
  7. Turn dough onto a floured surface; shape into an 8 or 9-inch disk and cut into eighths.
  8. Chill on a lined baking sheet for about 15 minutes.
  9. Bake for about 15 minutes until lightly golden; cool slightly on the pan before transferring to a wire rack.
  10. For the glaze, melt butter in a small pan until browned; combine with confectioner’s sugar and milk until smooth.
  11. Drizzle glaze over cooled scones and enjoy!
