  • 1 large sweet potato, diced
  • 1 lb flat iron steak, diced
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 4 green onions, sliced
  • 2 tbsp coconut aminos
  • Sea salt and cracked black pepper

Instructions

  1. Microwave the diced sweet potatoes with salt for 4-6 minutes until slightly tender.
  2. Heat 2 tablespoons of olive oil in a skillet over high heat. Brown the steak for about 10 minutes, turning occasionally. Remove from skillet.
  3. In the same skillet, add another tablespoon of olive oil and sauté the sweet potatoes until browned (3-4 minutes).
  4. Add garlic to the pan and sauté until fragrant (about 1 minute).
  5. Stir in bell peppers and green onions; cook until peppers are tender.
  6. Return steak to the skillet, add coconut aminos, toss to combine, and heat through for about 2 minutes.
  7. Garnish with cracked black pepper and cilantro before serving.
